Greek Salad

 

Ingredients

1 small red onion, cut into thin slices 

Salt and black pepper freshly ground, as desired 

3 tablespoons extra virgin olive oil Olivos Espiros

1½ teaspoon dried oregano or thyme

150 grams of feta cheese crumbled or cut into squares or cut into a rectangular part

3 large ripe tomatoes cut into medium pieces2 sliced large cucumbers  1 green pepper, cut into thin slices
1 teaspoon dried oregano or thyme 
150 grams of feta cheese crumbled or cut into pictures or cut into a rectangular part 
1 handful kalamata black olives Olivos Espiros

 

Way of preparation

 

Mix the tomato, cucumber and onion in a salad bowl. Sprinkle with salt to add taste and let it stand a few minutes so that the salt remove the juices of tomatoes and cucumbers. 

Add extra virgin olive oil Olivos Espiros and the oregano, and season with freshly ground pepper. Add feta cheese and olives over the salad.

 

Tip:

 

The key to a good Greek Salad is to leave the tomatoes and cucumbers to soak long enough after putting salt and before you add the extra virgin olive oil. Acidic juices of the tomatoes are combined with extra virgin olive oil to create delicious vinaigrette without vinegar or lemon juice. Serve with a loaf of bread roll because you're going to need to absorb every last drop of this delicious juice.
